  • 2 cups cooked chicken, shredded (Use leftover rotisserie chicken for convenience.)
  • 4 slices bacon, cooked and crumbled (Cook until crispy.)
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped

Dressing Ingredients

  • 1/2 cup mayonnaise (Can be substituted with yogurt.)
  • 2 tablespoons Dijon mustard
  • to taste salt and pepper (Adjust according to personal preference.)

Preparation

  • Begin by shredding the cooked chicken. Use leftover rotisserie chicken to save time if you like.
  • Cook your bacon until crispy. I always make a bit extra so we can snack on it while preparing!
  • In a large bowl, combine the shredded chicken, crumbled bacon, halved cherry tomatoes, and chopped romaine lettuce.
  • In a separate bowl, mix the mayonnaise with the Dijon mustard. Season the dressing with salt and pepper.
  • Pour the dressing over the chicken mixture and toss gently to coat everything evenly.
  • Serve chilled or at room temperature.

Notes

This salad is forgiving; feel free to use whatever ingredients you have on hand. Fresh herbs can enhance the flavors. Cooking with family can create lasting memories.
