A quick and delightful family meal that combines tender marinated chicken with fresh vegetables, all wrapped in warm tortillas, creating a Mediterranean feast at home.

Ingredients

For the Chicken Marinade

  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • to taste salt and pepper

For the Tacos

  • 4 small tortillas (Warm them before serving)
  • 1 cup diced tomatoes
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • for garnish fresh parsley (Don't skip the fresh herbs)

Instructions 

Preparation

  • In a bowl, combine olive oil, oregano, paprika, salt, and pepper. Add chicken breasts and marinate for 15 minutes.
  • Chop the veggies while the chicken marinates.

Cooking

  • Heat a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side or until cooked through. Remove from the skillet and let rest before slicing.
  • In the same skillet, warm the tortillas for a minute on each side.

Assembly

  • Place sliced chicken on each tortilla. Top with diced tomatoes, cucumber, red onion, and feta cheese. Garnish with fresh parsley.
  • Serve immediately and enjoy the meal.

Notes

Use what you have on hand for flexibility. Store leftovers in airtight containers for 3-4 days. Reheat in microwave or oven at 350°F for 10 minutes to regain juiciness.
