  • 4 pieces boneless, skinless chicken breasts (Choose organic options if possible.)
  • 1 unit lime, juiced (Fresh lime juice brightens the dish.)
  • 1 unit avocado, diced (Use a ripe avocado for optimal taste.)
  • 1/4 cup fresh cilantro, chopped (Rinse well before chopping.)
  • 1 teaspoon chili powder (Adjust based on spice tolerance.)
  • 2 tablespoons olive oil (Use extra virgin for better flavor.)
  • Salt and pepper to taste (Seasoning enhances all flavors.)

Instructions 

Preparation

  • In a bowl, mix the lime juice, olive oil, chili powder, salt, and pepper until well combined.
  • Marinate the chicken breasts in the mixture for at least 30 minutes or overnight for maximum flavor.

Cooking

  • Preheat the grill to medium heat.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
  • Remove the chicken from the grill and let it rest for a few minutes.
  • Top the grilled chicken with diced avocado and chopped cilantro before serving.

Notes

For leftovers, store in an airtight container for 3 to 4 days. Reheat in a warm oven or stovetop. Avoid adding avocado to leftovers for best quality.
