Ingredients

For the marinade

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste Salt (Adjust according to preference.)

For the skewers

  • 1 lb chicken breast, cut into chunks
  • Skewers (wooden or metal) (Soak wooden skewers in water for 30 minutes before using.)

Instructions 

Preparation

  • In a bowl, combine olive oil, lemon juice, lemon zest, black pepper, garlic powder, oregano, and salt.
  • Add chicken chunks to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Thread marinated chicken onto skewers, keeping them tight for uniform cooking.
  • Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  • Remove from grill and serve hot.

Notes

Serve family-style with a fresh green salad or grilled vegetables. Store leftovers in an airtight container for up to 3 days, reheating gently to maintain moisture.
