A simple and flavorful Lemon Chicken recipe perfect for busy families, marinated to tender perfection and easily grilled or baked for a delightful meal.

Ingredients

For the marinade

  • 1/4 cup olive oil (A good quality olive oil enhances flavor.)
  • 1/4 cup lemon juice (Freshly squeezed is best.)
  • 3 cloves garlic, minced (Fresh garlic adds robust flavor.)
  • 1 tablespoon dried oregano (Fresh oregano can be used for more flavor.)
  • to taste salt and pepper (Adjust according to preference.)

For the chicken

  • 4 pieces chicken thighs (Chicken thighs remain moist during cooking.)

Instructions 

Marinating the Chicken

  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Place chicken thighs in a zip-top bag and pour marinade over the chicken.
  • Seal and refrigerate for at least 30 minutes, or overnight for deeper flavor.

Cooking the Chicken

  • Preheat the grill or oven to 400°F (200°C).
  • Remove chicken from marinade and discard the marinade.
  • Grill or bake chicken for 25-30 minutes, or until cooked through and juices run clear.

Serving the Dish

  • Serve hot on a large platter with a sprinkle of fresh herbs.

Notes

If storing leftovers, keep in an airtight container in the fridge for 3-4 days. You can reheat in the microwave or stovetop with a splash of water to keep them moist.
