Ingredients

For the marinade

  • 1/4 cup honey (Can swap with maple syrup for a different sweet flavor.)
  • 1/4 cup soy sauce (Use gluten-free soy sauce for gluten-free option.)
  • 2 cloves garlic, minced (Aromatic addition to the marinade.)
  • 1 tablespoon ginger, grated (Adds freshness and warmth.)
  • 1 tablespoon olive oil
  • to taste salt and pepper (Season according to preference.)

For the skewers

  • 2 lbs chicken breast, cut into cubes (Can use chicken thighs for juiciness.)
  • Skewers (wooden or metal) (Soak wooden skewers in water for 30 minutes to prevent burning.)

Optional vegetables

  • Bell peppers (red or green), onion (yellow), zucchini (For added color and flavor.)

Instructions 

Preparation

  • In a bowl, whisk together honey, soy sauce, garlic, ginger, olive oil, salt, and pepper to make the marinade.
  • Add the chicken cubes to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Grilling

  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken onto skewers, alternating with vegetables if desired.
  • Grill skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through.

Serving

  • Serve hot with rice or roasted vegetables on a large platter.
  • Garnish with fresh herbs for added color.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or skillet to keep juicy. Consider preparing the marinade a day in advance for deeper flavor.
