  • 4 medium potatoes (Leave skins on for texture.)
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese (Can substitute with Pecorino.)
  • 2 cloves garlic, minced (Fresh or pre-minced.)
  • Salt and pepper to taste
  • Fresh parsley for garnish (Optional.)

Instructions 

Preparation

  • Preheat the grill to medium-high heat and ensure the grates are clean and lightly oiled.
  • Season chicken breasts with salt and pepper, patting them dry for a better crust.
  • Brush the chicken with honey BBQ sauce and grill for 6-7 minutes per side, or until cooked through.
  • While chicken is grilling, wash and chop potatoes into bite-sized pieces.

Cooking Potatoes

  • In a bowl, toss potatoes with olive oil, minced garlic, salt, and pepper.
