A simple, creamy dressing that captures the essence of traditional Caesar salad without the anchovies, perfect for elevating any meal.

Ingredients

Dressing Ingredients

  • 2 cloves garlic, chopped (If your food processor won't cut it finely.)
  • 1 cup mayo (recommended: Hellman's Vegan Mayo) (Can substitute with Greek yogurt for a tangier version.)
  • 2 tsp dijon mustard
  • ½ tsp mustard powder
  • 1-2 tbsp white vinegar (Start with one tbsp, add more for a more acidic dressing.)
  • 2 tsp Worcestershire sauce (For a savory, umami flavor.)
  • ½ cup shredded parmesan (Use freshly grated for more flavor.)
  • 1/2 piece lemon (juice only) (Adds brightness.)
  • 2 tbsp olive oil (approx.)
  • ½ tsp ground black pepper

Instructions

Preparation

  • Add all ingredients except for the olive oil to the food processor.
  • Select the puree option on your food processor.
  • Begin to puree the ingredients and scrape the bowl once for even mixing.
  • Slowly add one tablespoon of olive oil while pureeing until the dressing is creamy.
  • Test the dressing for texture and taste, adjust salt, lemon, or vinegar if needed.
  • Add more olive oil until the desired consistency is achieved.
  • Store in an airtight container in the fridge and use within 3-4 days.

Notes

Allow the dressing to rest for 30 minutes in the fridge before serving to enhance flavor. If it thickens too much, stir in a teaspoon of water or more lemon juice before serving.
