Ingredients

Main ingredients

  • 4 pieces boneless, skinless chicken breasts (Look for organic options if possible.)
  • 1 cup salsa verde (Choose a brand that doesn't use preservatives for the best taste.)
  • 1 cup shredded pepper jack cheese (For a milder flavor, substitute with Monterey Jack.)
  • 1 tablespoon olive oil (Use extra virgin for the best quality.)
  • to taste salt (Enhances the chicken’s natural flavors.)
  • to taste pepper (Freshly ground pepper provides the best taste.)

Instructions

Preparation

  • Preheat grill to medium-high heat.
  • Season chicken breasts with olive oil, salt, and pepper.

Grilling

  • Grill chicken for 6-7 minutes on each side or until cooked through.
  • Top each chicken breast with salsa verde and pepper jack cheese in the last few minutes of grilling.
  • Close the grill lid until cheese is melted.
  • Remove from grill and let rest before serving.

Notes

For juicier chicken, consider marinating it in salsa verde for an hour before grilling. Serve family-style with warm tortillas, rice, or salad. Store leftovers in an airtight container in the fridge for up to 3 days.
