A refreshing and easy-to-prepare salad featuring tender rotisserie chicken, fresh herbs, and creamy dressing, perfect for busy families.

Ingredients

Main Ingredients

  • 2 cups rotisserie chicken, shredded (Shredding the chicken while it’s still warm makes it easier and adds a nice warmth to the salad.)
  • 1/2 cup creamy green goddess dressing (You can find store-bought options, but homemade dressing is simple and delightful if you have time!)
  • 1/2 cup celery, diced (Choose crisp stalks for that satisfying crunch in every bite.)
  • 1/4 cup red onion, diced (Rinse the diced onions under cold water to mellow their flavor if your family isn’t fond of the sharp taste.)
  • 1/4 cup fresh herbs (such as parsley, basil, or chives), chopped (Use a mix of herbs to add complexity in flavor; don’t be afraid to experiment!)
  • Salt and pepper to taste (Always taste as you go to ensure the seasoning is just right for your family’s palate.)

Instructions

Preparation

  • In a large bowl, combine the shredded rotisserie chicken, green goddess dressing, diced celery, diced red onion, and chopped herbs.
  • Take your time mixing; the goal is to ensure every piece of chicken is coated in that delicious dressing!
  • Mix until well combined and enjoy the beautiful colors that come together as you stir!
  • Season with salt and pepper to taste, keeping in mind that a little seasoning can go a long way in enhancing the flavors.
  • Serve immediately or refrigerate for later; this salad tastes even better after the flavors meld in the fridge for a while!

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. Keep the dressing separate if possible and add a splash of water or olive oil if it thickens.
