A heartwarming dish of juicy chicken, crispy coating, and rich marinara that brings families together around the table.

Ingredients

For the Chicken

  • 4 pieces chicken breasts (Use thicker pieces for juicier meat.)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (Feel free to adjust to taste.)
  • 2 large eggs (Beaten.)

For the Coating

  • 1 cup breadcrumbs (Panko can be used for extra crunch.)
  • 1/2 cup grated Parmesan cheese (Adds fantastic flavor.)

For Cooking

  • 1/4 cup olive oil (For frying the chicken.)

For Topping

  • 2 cups marinara sauce (Don't skimp on the sauce.)
  • 1 cup shredded mozzarella cheese

For Garnish

  • 1 bunch fresh basil (Optional, but adds vibrancy.)

Instructions 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  • In a shallow bowl, combine breadcrumbs and grated Parmesan cheese.
  • Dip each chicken breast in beaten eggs, then coat with the breadcrumb mixture.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Fry the chicken for 3-4 minutes on each side until golden brown.
  • Once browned, place the chicken in a baking dish.
  • Top each piece with marinara sauce and shredded mozzarella cheese.
  • Bake in the preheated oven for 15-20 minutes until the cheese is bubbly.

Serving

  • Garnish with fresh basil if desired and serve family-style.

Notes

Store leftovers in an airtight container. For best results, reheat in the oven to maintain crunchiness. You can also freeze unbaked chicken Parmesan for later use.
